Recipe #16: Toffee Pecan Crunch Cookies

Yeah you read that. Pecan.

Identity crisis continues. I added nuts. Again. Is it hot in here? Why is everything blurry? No? Ok, that’s just me losing mind, one sleep-deprived day at a time. Seriously- when the hell do breastfed babies start sleeping more!?! Wah. I read somewhere that the average age of night weaning is 18 months. Sweet baby Jesus help me 😭. I’ll just keep baking. Sugar consumption makes up for lack of sleep righy? Right!? RIGHT!?!?!

The recipe: Followed the recipe again. And I actually toasted my own damn nuts. Just call me Martha. Or Tish. I actually used Heath Bar, not just Heath. Somehow I didn’t realize that you could buy toffee without chocolate attached. Obviously a chocolate addict here. I think that the chopped Heath Bar worked perfectly, could barely taste the chocolate anyway. These, despite the addition of nuts, we’re really good and once again, a big hit! I’ve been making a lot of the “Drop cookies” lately that are, by definition, pretty damn easy to make. Perhaps it’s time to start looking at some of the other categories.

One Bite Rating:

Erin: 4.1/10: I was surprised that I actually didn’t hate these. I chopped the pecans more on the fine end of the spectrum so they weren’t too in your face. And somehow I found myself going back to these too often to eat more.

Husband: 3/10. “Too sweet”

Bottom Line: Good and easy. Will make as a special treat if someone I love happens to love toffee. I probably would not make these just for me.
